Oven Hall
Three ovens, one bench
Oven Hall is a single room containing three ovens, one bench, and the book. Two of
the ovens are instrumented. The bench is checked for level on Monday mornings, which is recorded in the book,
and the book is not consulted by anybody who is about to bake.
- OVEN 1Stone floor, wood fired, uncontrolled. Retained as a control. Nothing has ever been
reproduced in it, including the results of experiments conducted in it.
- OVEN 2Electric deck oven, 12 thermocouples on a logger, one shelf, one steam tray. This is where
the work is done, and it is where the work will continue to be done, because Oven 1 is a wood oven.
- OVEN 3Identical to Oven 2 in every respect except that its timer defaults to 79 minutes and
always has. See the incident report. A label reading "38" has been applied to
the timer. The label is visible.
